Short answer: overrun is the amount of air whipped into soft serve as it freezes, shown as a percentage. More overrun means a lighter product and more serves per litre of mix (better margin); too much makes it foamy and unstable; too little makes it dense and expensive to serve. Gravity machines typically run around 30-40% and pump machines around 50-80%.
What is overrun?
If 1 litre of mix makes 1.4 litres of soft serve, that's 40% overrun — the extra volume is air. It's why soft serve is light and smooth rather than dense like gelato.
Why it decides your margin
Overrun literally creates volume from air. Higher overrun means more serves from the same mix, which means a lower cost per serve. It's one of the biggest — and most overlooked — levers on soft serve profitability.
Too much vs too little
- Too much overrun: foamy and airy, melts fast, and the product looks like it's collapsing. Customers notice.
