How to Clean a Commercial Soft Serve Machine (Daily, Weekly & Heat Cycles)

A clear daily and weekly cleaning routine that keeps your machine hygienic, compliant and serving perfectly.

Short answer: clean your soft serve machine every day using its rinse/clean cycle (or heat-treatment cycle if it has one), and do a full strip-down clean of all product-contact parts at least weekly — more often if your council or mix supplier requires it.

Why cleaning matters (beyond hygiene)

Soft serve mix is dairy, so it's a food-safety risk if it's left sitting in a warm machine. Residue also wears parts and hurts product quality. A clean machine freezes better, tastes better and lasts longer.

Daily cleaning

  • Run the machine's rinse and clean cycle at close (follow the manufacturer's steps).
  • Machines with heat treatment pasteurise the mix overnight — but still wipe down draw valves and spouts.
  • Clean the draw valve, spout and drip tray.
  • Check mix levels and rotate stock (first in, first out).

Weekly deep clean

  • Disassemble every part that touches product: draw valve, O-rings, scraper blades and beater.
  • Wash in warm soapy water, sanitise, and air-dry — never reassemble wet.
  • Inspect O-rings and scraper blades for wear or splits and replace as needed — cheap parts, big impact.
  • Clean the air filter / condenser area so the machine can breathe.

Sanitising

Use a food-safe sanitiser at the correct dilution and rinse per the product instructions. Never use abrasive scourers on cylinders or valves.

A simple cleaning log protects you at a food-safety audit and helps staff stay consistent.
